| 4 squares unsweetened chocolate 1/2 pound (2 sticks) butter 4 eggs 2 cups sugar 1 teaspoon vanilla 1 cup sifted flour 1/4 teaspoon salt 2 cups chopped pecans (optional) Melt chocolate with butter in a small saucepan. Beat eggs well in large mixer bowl. Gradually beat in sugar until mixture is fluffy-thick. (This takes about 10 mintues in an electric mixer.) Stir in vanilla and chocolate mixture, then fold in flour, salt and nuts until blended. Pour into two 8 x 8 inch baking pans and bake in 350 degree oven at 25 mintues or until shiny and firm on top. Do not overbake, middle should be fudge-like. Cool and cut into squares, then enjoy! | |
